Beef 'N Dumplings Main Dish Soup Recipe
- 1 (4 ounce.) can sliced mushrooms, liquid removed
- 1 c. celery, sliced
- 2 tbsp. butter
- 1 can beef soup
- 1 can old fashioned vegetable soup
- 1 soup can water
- 1 1/2 c. cubed cooked beef
- 1 c. biscuit mix
- 1/3 c. lowfat milk
- 1 tbsp. minced parsley
- 1/8 teaspoon thyme leaves, crushed
- In large saucepan, brown mushrooms and cook celery in butter till tender.
- Add in soups, water, and beef; bring to boil.
- Meanwhile, combine biscuit mix, lowfat milk, parsley and thyme.
- Drop 5 to 6 spoonfuls on boiling soup; reduce heat.
- Cook uncovered over low heat 10 min.
- Cover; cook 10 min.
- Cover; cook 10 min more.
- Makes about 6 c..
