Soba Noodle Salad with Duck and Pickled Ginger Dressing

- 2 qt. KRAFT Lime Cilantro Vinaigrette
- 1-1/2 cups pickled ginger, chopped
- Salad
- 1-1/2 gal. soba noodles, cooked, cooled
- 1-1/2 qt. napa cabbage, thinly sliced
- 3 cups pea pods, blanched, cut into 1/2-inch pieces
- 3 cups carrots, blanched, cut into 1/2-inch pieces Target 2 lb For $3.00 thru 02/06
- 3 cups red bell peppers, cut into thin strips Target 1 pkg For $2.99 thru 02/06
- 48 each fresh mint leaves, thinly sliced
- 24 each fresh basil leaves, thinly sliced
- Topping
- roasted duck breasts, sliced
- 1-1/2 cups PLANTERS Dry Roasted Peanuts, chopped Rite Aid Buy 1 Get 1 Free thru 02/06
- 3 cups shallots, thinly sliced, flour battered and fried until crisp
- Pickled Ginger Dressing: Mix dressing and ginger until blended.
- Salad: Combine ingredients.
- Add Pickled Ginger Dressing; mix lightly.
- For each serving: Plate about 1-1/2 cups Salad; top with 3 oz.
