Basil Baked Cod Fillets Recipe

  1. (Serves 4)
  2. It's from the National Fisheries Board,I think.
  3. I made it with orange roughy but you could use any hard, white fish like cod or possibly pollack.
  4. Preheat oven to 400 degrees.
  5. Cut cod into serving size pcs.
  6. Pat dry.
  7. Place lemon juice and extra virgin olive oil in a baking dish which is big sufficient to hold all the fish in one layer.
  8. Combine.
  9. Place cod in dish and turn to coat with juice/oil.
  10. Sprinkle cod with dry basil.
  11. Layer tomato slices on fish pcs.
  12. Sprinkle with parmesan cheese.
  13. Season with salt and pepper.
  14. Cover dish with aluminum foil.
  15. Place in oven and bake for 10-15 min, depending on thickness of the fish.
  16. Serve.
