Basil Baked Cod Fillets Recipe
- 1 1/2 lb cod fillets
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. extra virgin extra virgin olive oil
- 1/2 tsp dry basil
- 4 whl plum tomatoes cored, halved lengthwise and sliced crosswise
- 4 Tbsp. grated parmesan cheese salt and pepper
- (Serves 4)
- It's from the National Fisheries Board,I think.
- I made it with orange roughy but you could use any hard, white fish like cod or possibly pollack.
- Preheat oven to 400 degrees.
- Cut cod into serving size pcs.
- Pat dry.
- Place lemon juice and extra virgin olive oil in a baking dish which is big sufficient to hold all the fish in one layer.
- Combine.
- Place cod in dish and turn to coat with juice/oil.
- Sprinkle cod with dry basil.
- Layer tomato slices on fish pcs.
- Sprinkle with parmesan cheese.
- Season with salt and pepper.
- Cover dish with aluminum foil.
- Place in oven and bake for 10-15 min, depending on thickness of the fish.
- Serve.
