Elan's Scrambled Eggs
- Pam cooking spray
- 2 eggs
- 13 cup of shredded cheese
- 3 slices deli ham, thinly sliced
- 2 pinches chives, dried or 2 pinches fresh chives
- pepper
- 1 pinch red pepper flakes
- 14 teaspoon Pickapeppa Sauce
- 1 small roma tomato, diced
- 3 ready sliced jalapenos, finely diced
- 1 button mushroom, washed and sliced
- In a mixing bowl, crack the eggs, add chives, pepper, red pepper flakes, and picappepa.
- Mix well.
- Heat frying pan sprayed with Pam on stove over medium heat, add egg ingredients.
- As edges are looking cooked then add cheese and ham, tomato, jalapenos, mushroom.
- When eggs are slightly solid, flip egg in half and cut with spatula in half again.
- Continuing cooking till eggs are cooked and cheese has melted.
