Zucchini Ribbon Salad
- 12 cup fresh tomato, diced
- 12 cup matchstick carrot
- 13 cup green onion, sliced
- 14 cup balsamic vinaigrette
- 1 tablespoon basil pesto
- 14 cup crumbled gorgonzola
- 2 medium zucchini
- Combine all ingredients (except zucchini) in salad bowl.
- Cut zucchini into 3-4 inch long sections.
- Cut thin lengthwise strips of zucchini, using vegetable peeler into bowl.
- (Peel until reaching core with seeds, discard inner portion.
