Spiced Tomato Soup Cancakes

  1. Preheat oven to 350AF.
  2. Spray 7 empty (10-3/4 oz.)
  3. soup
  4. cans (label removed) with vegetable cooking spray.
  5. Mix flour, sugar,
  6. baking powder, allspice, cinnamon, baking soda and cloves in a large
  7. bowl.
  8. Add soup, shortening, eggs and water.
  9. Beat until mixed, using
  10. mixer at low speed.
  11. Spoon into prepared cans and place on baking sheet.
  12. Bake for 30
  13. minutes or until done.
  14. Cool in cans on wire racks.
  15. Remove cakes from
  16. cans.
  17. Drizzle tops and sides of cakes with Orange Icing.
  18. Top with
  19. orange zest, chopped nuts or red candied cherries cut in "leaves."
  20. Orange Icing: Mix powdered sugar, orange juice and grated orange rind.
  21. For gift-giving: Leave cakes in cans.
  22. Cover
  23. cans with wrapping paper.
  24. Add pieces of ribbons, gold medallions,
  25. holiday stickers, etc.
  26. Wrap in plastic wrap and tie with ribbon.
