Guacamole Mushrooms!

  1. Combine tomatoes, onion, chiles, and salt.
  2. Allow to marinate about 15 minutes.
  3. Split avocado in half.
  4. Remove seed, scoop out meat.
  5. Put in blender or processor.
  6. Add cilantro, vinegar, water and lemon juice.
  7. Blend until smooth.
  8. Add puree to tomato mixture and mix gently.
  9. Refrigerate before using.
  10. Adjust seasoning as desired.
  11. Stuff mushrooms and serve.
  12. * The amount of finished mushrooms depend on the size of the mushroom.
  13. Try to get them equal in size.
