Tomato-Basil Soup with Grilled Cheese

  1. Heat oil in large saucepan on medium-high heat.
  2. Add onions, carrots and celery; cook and stir 5 min.
  3. Stir in broth and water.
  4. Bring to boil; cover.
  5. Simmer 10 min.
  6. or until vegetables are tender.
  7. Add tomatoes and pepper; stir.
  8. Return to boil.
  9. Simmer 5 min.
  10. Stir in cream cheese and 1/4 cup basil.
  11. Remove from heat.
  12. Use immersion blender to blend soup until smooth.
  13. Return to heat; cover.
  14. Keep warm on low heat while you prepare America's Favorite Grilled Cheese Sandwiches.
  15. Cut each sandwich into 6 pieces.
  16. Ladle soup into 6 bowls; sprinkle with remaining basil.
  17. Top each soup bowl with 2 sandwich pieces.
  18. Serve immediately.
