Leona's Oven BBQ Chicken
- 1 chicken, cut up (3 lbs. approx)
- 14 cup oil
- 2 medium onions, sliced (1/4 inch)
- 12 cup chopped celery
- 1 cup ketchup
- 1 cup water
- 14 cup vinegar (or lemon juice)
- 2 -3 tablespoons Worcestershire sauce
- 2 tablespoons brown sugar
- 2 tablespoons yellow mustard
- Brown chicken slowly in skillet in 1/4 cup of salad oil.
- Remove chicken.
- In skillet, cook onions and celery until tender.
- Add remaining ingredients.
- Season with salt and pepper to taste and simmer for 10 minutes (sometimes I skip the simmering).
- Place chicken in 9x11 baking dish.
- Pour sauce over chicken.
- Bake uncovered in slow oven (325-350 degrees) for 1 1/4 hrs or until done.
