Cucumber Raita
- 1 cucumber, peeled, seeded and grated or chopped
- 1 cup plain non fat yoghurt
- 1 tsp chopped mint leaves, or as an alternative cilantro or corriander leaves
- 1/2 green chilli, seeded and chopped
- 1/4 tsp ground cumin
- 1 clove crushed and chopped garlic
- 1/2 cup or half a red pepper, seeded and chopped
- 1 pinch of salt
- Squeeze some of the juice or strain the grated or chopped cucumber and add it to the yoghurt.
- Mix the rest of the ingredients to the yoghurt mix,
- Other vegetables can be added such as onion and carrot,
- Add a few corriander or mint leaves as a garnish, serve chilled.
- Great with poppadoms or roti bread, and spicey foods.
