Tomato Lentil Soup
- 14 cup olive oil
- 2 large onions, chopped
- 2 carrots
- 12 teaspoon thyme
- 12 teaspoon marjoram
- 3 cups chicken broth
- 1 cup lentils, washed
- 14 cup fresh parsley, chopped
- salt and pepper
- 1 lb canned tomato
- 13 cup sherry wine (NOT OPTIONAL)
- saute 3-5 minutes, olive oil, onions and carrots, Add and saute 1 minute thyme and marjoram, then add chicken broth, lentils, parsley , salt and pepper to taste , and tomatoes.
- cook, covered 45 minutes till lentils are tender.
- Add 1/3 cup or less sherry (not optional).
