Basil Tomato Pepper Sandwich

  1. Heat a skillet or panini maker on medium.
  2. Spray both outside pieces of bread with butter.
  3. On the inside bottom piece of bread, add 1/2 tablespoon of balsamic dressing.
  4. Then add 4 basil leaves, tomatoes, pepper, 4 more basil leaves and mozzarella cheese.
  5. Add 1/2 tablespoon balsamic dressing to the top inside slice of bread and place bread with balsamic dressing side facing down onto sandwich.
  6. Place sandwich on skillet.
  7. Cook until browned on the bottom, then flip and cook until bottom is lightly golden.
  8. Use a spatula to push the bread down so the cheese melts and sandwich flattens.
  9. Makes 1 sandwich.
