Caramel tart

  1. Preheat oven to moderate
  2. Seperate eggs, keeping whites and yolks in seperate bowls until needed
  3. Place sugar and flour in a saucepan.
  4. On low heat, mix to a paste with a little milk.
  5. Continue stirring and add butter, egg yolks and remaining milk
  6. Stir over low heat until caramel commences to thicken.
  7. Stir vanilla into mixture
  8. Place mixture into pastry case top with beaten egg whites and a little sugar
  9. Place in moderate oven for approx 20 mins until top has browned
  10. Prior to serving dust with sifted icing sugar.
  11. Serve with whipped cream or ice cream
