Good Ol' Chili
- 1 1/2 lb. extra lean ground beef
- 2 or 3 (15 oz. each) cans pinto beans, drained
- 1 large onion, chopped
- 3 large cloves minced garlic
- 1 (15 oz.) can whole tomatoes, cut up and juice reserved
- 1 (6 oz.) can tomato paste
- 1/2 c. water
- 2 or 3 Tbsp. chili powder
- 2 tsp. salt
- 1 tsp. dried oregano leaves, crushed
- 1 tsp. ground cumin
- 1/4 tsp. pepper
- Crumble ground beef into slow cooker. Add beans, onion and garlic.
- In a medium bowl, stir tomatoes with juice, tomato paste, water, chili powder, salt, oregano, cumin and pepper until blended. Stir into meat mixture. Scrape down sides of slow cooker. Cover and cook on high for 3 1/2 to 4 hours or on low for 7 to 8 hours or until onion is tender.
- Serve with shredded Cheddar cheese and crackers.
- Makes 6 to 8 servings.
- Preparation Time: 10 minutes.
