Tanaka Traditional Noodles

  1. Prepare pasta.
  2. Rinse, drain and mix with 1 tablespoon toasted sesame oil.
  3. Set aside.
  4. Reserve shiitake soaking liquid, discard stems and slice shiitake mushrooms caps.
  5. Heat oil, saute onion, add carrots, shiitake and soaking liquid.
  6. Simmer 5 minutes.
  7. Mix in greens, add pasta, shoyu, ginger and almonds.
  8. Serve.
