Vietnamese Fried Rice with Chicken
- 6 Tablespoons Cooking Oil
- 1 pound Raw Chicken, Cut Into Cubes
- 6 whole Garlic Cloves, Pressed
- 2 whole Onions, Chopped
- 2 teaspoons Each Of Salt, Pepper And Sugar
- 4 Tablespoons Soy Sauce Or More To Taste
- 6 cups To 8 Cups Cooked Brown Basamati Rice (See Note Below)
- 2 cups Frozen Veggies, Like Peas, Carrots Or Beans
- 2 whole Eggs, Beaten
- Note: To prepare the rice, cook 3 cups brown basamati rice in 6 cups of water for 45 minutes or until water is absorbed.
- This step can be done in advance for a quicker supper!
- Heat the cooking oil in a large electric skillet.
- Add the chicken cubes, garlic, onoins, salt, pepper, sugar, and soy sauce.
- Stir-fry until meat is tender and hot, 23 minutes.
- Add the cooked rice and stir-fry 5 minutes.
- Add the frozen veggies (such as peas, carrots or green beans).
- Stir well into the rice-meat mixture.
- Just before serving, clear an area in the skillet and add the beaten eggs.
- Heat and stir until eggs are cooked and mixed through.
- Serve hot.
