Vietnamese Fried Rice with Chicken

  1. Note: To prepare the rice, cook 3 cups brown basamati rice in 6 cups of water for 45 minutes or until water is absorbed.
  2. This step can be done in advance for a quicker supper!
  3. Heat the cooking oil in a large electric skillet.
  4. Add the chicken cubes, garlic, onoins, salt, pepper, sugar, and soy sauce.
  5. Stir-fry until meat is tender and hot, 23 minutes.
  6. Add the cooked rice and stir-fry 5 minutes.
  7. Add the frozen veggies (such as peas, carrots or green beans).
  8. Stir well into the rice-meat mixture.
  9. Just before serving, clear an area in the skillet and add the beaten eggs.
  10. Heat and stir until eggs are cooked and mixed through.
  11. Serve hot.
