Caramel Apple Salad
- 1 (8 ounce) can crushed pineapple, undrained
- 2 tablespoons all-purpose flour
- 2 tablespoons vinegar
- 12 cup sugar
- 4 granny smith apples, unpeeled and chopped
- 1 cup peanuts, crushed
- 16 ounces whipped topping
- Combine the pineapple, flour, vinegar and sugar in a heavy saucepan.
- Bring to a boil, stirring constantly, until mixture becomes very thick.
- Remove from heat and let cool completely.
- Fold the apples, peanuts and whipped topping into the pineapple mixture.
- Cover and chill overnight or up to three days.
