Broccoli And Potato Soup Recipe
- 2 c. Chicken stock or possibly broth
- 3 Tbsp. Butter
- 4 c. Cubed potatoes
- 2 c. Lowfat milk
- 2 c. Lowfat sour cream
- 2 med Onions, minced
- 1 bn Fresh broccoli or possibly 32 ounce. pkg. frzn broccoli pcs
- 1/2 c. Grated Parmesan cheese
- 2 Tbsp. Worcestershire sauce
- 2 lrg Cloves garlic, chopped Salt & pepper to taste
- Chop fresh broccoli and cook till tender.
- Drain.
- Put broccoli in food processor.
- Mix soup stock with lowfat milk.
- Add in 1 c. of soup stock/lowfat milk mix to broccoli.
- Process till broccoli is in tiny pcs.
- Boil cubed potatoes and minced onions in water for 10 min.
- Drain; return potatoes and onions to soup pot and add in rest of soup stock/lowfat milk mix, chopped garlic, salt, pepper, butter and chopped broccoli with soup
- stock.
- Bring to a boil and immediately reduce to a simmer.
- Simmer 10 min or possibly longer if you prefer vegetables well done.
- Add in Parmesan cheese, lowfat sour cream and Worcestershire sauce.
- Stir till all is mixed in.
- Don't allow soup to boil after adding lowfat sour cream it will cause separation of the lowfat sour cream.
- You can add in a sprinkling of shredded chedder cheese for garnish.
- 8-10 servings
