Chicken and Vegetables in a Pot
- olive oil
- kosher salt
- fresh ground black pepper
- 1 whole cut up chicken
- 1 cup red onion, diced
- 1 teaspoon fresh garlic, crushed
- 2 cups zucchini, sliced
- 1 12 cups baby carrots
- 1 cup button mushroom
- 12 cup chicken broth
- 12 cup white wine
- 2 tablespoons balsamic vinegar
- Italian dressing, packet (Good Seasonings)
- Heat 3 tablespoons of olive oil in a large, heavy-bottom skillet.
- Wash chicken and pat dry with paper towels.
- Salt and pepper - to taste- the chicken pieces; brown on both sides.
- Transfer chicken to crockpot; add all remaining ingredients.
- Give a good stir.
- Cook on Low for 6 to 8 hours.
- Serve over wide egg noodles.
