Chicken Pocket Sandwiches Recipe
- 1/2 c. plain yogurt
- 1 tbsp. thinly sliced green onion
- 1 tbsp. chutney, snipped
- 1/8 teaspoon salt
- 1 c. minced cooked chicken
- 1/2 c. finely minced zucchini
- 4 sm. pita bread rounds
- 2 ounce. shredded Cheddar cheese
- In a medium mixing bowl stir together yogurt, green onion, chutney and salt.
- Stir in chicken and zucchini till well mixed.
- Cover and refrigeratefor at least 2 hrs.
- To serve, cut each pita round in half horizontally.
- Or possibly cut a slit along one edge of each pita.
- Spoon 1/4 of the mix atop one pita half.
- Top with 1/4 of the shredded cheese.
- Serve with the remaining pita bread half.
- Or possibly, spoon chicken mix into pitas.
- Spoon in cheese.
- 4 servings.
