Glazed New Potatoes
- 1 lb new potato
- 78 cup chicken stock
- 8 tablespoons extra virgin olive oil
- 4 tablespoons red wine vinegar
- 1 tablespoon chopped chives
- Wash and slice each potato in half.
- Put them in a saucepan with the chicken stock, the olive oil and 3 tablespoons of the vinegar.
- Bring to the boil and boil hard until the liquid has all but evaporated and the potatoes are glossy.
- Sprinkle over the remaining vinegar, season with salt and pepper and scatter over the chives.
