Mashed Sweet Potatoes and Carrots
- 2 large sweet potatoes, peeled, cubed
- 4 large carrots, peeled, sliced
- 2 garlic cloves, peeled
- 1/4 cup whipping cream
- 2 tablespoons butter
- Salt and freshly ground pepper
- Cook potatoes, carrots and garlic in large pot of boiling salted water until very tender.
- Drain; return to same pot.
- Mash with potato masher.
- Add cream and butter and mash until smooth and creamy.
- Season to taste with salt and pepper.
