Injera
- 2 cups self-rising flour
- 2 cups seltzer water or 2 cups club soda
- 12 teaspoon baking soda
- Mix ingredients in a large bowl.
- Mix until its a liqudy consistency.
- Heat large skillet over med/high heat.
- Add small amount of cooking spray.
- Pour a thin layer of mixture into the pan.
- Cook until spongy and cooked through.
