Happy Trails Muffins
- 34 cup oat bran (use toasted for more flavour)
- 34 cup flour
- 12 cup whole wheat flour
- 2 teaspoons baking powder
- 12 teaspoon baking soda
- 1 teaspoon cinnamon (original calls for 1/2ts but I like it better this way)
- 14 teaspoon nutmeg
- 14 teaspoon salt
- 1 large egg
- 1 cup applesauce
- 12 cup low-fat plain yogurt
- 2 tablespoons oil (mixed with 1 tbsp applesauce)
- 1 tablespoon applesauce
- 3 tablespoons honey or 3 tablespoons agave nectar
- 1 cup apple, chopped (1 apple)
- 12 cup pecans, chopped (optional, I leave them out)
- cinnamon sugar, for sprinkling (optional)
- Coat muffin pan with non-stick cooking spray or line with paper cups (muffins will stick to them though).
- Combine first 8 ingredients in a large bowl.
- In a second bowl combine oil mixed with 1 tbs applesauce, 1 cup applesauce, yoghurt, egg and honey/agave nectar.
- Add to dry ingredients and stir only until just moistened.
- Fold in apples and pecans if using.
- Pour into prepared muffin tins, sprinkle lightly with cinnamon sugar if using.
- and bake in the pre-heated oven at 400F for 20-25 minutes.
