Crowded Chicken for 50
- 32 lb. chicken breasts and some thighs
- 14 env. onion soup mix
- Cut breasts into 3 pieces each with cleaver or small hatchet.
- Layer in 2 turkey-sized roasters, skin side up.
- Cover each layer with onion soup mix using half the chicken and half the soup mix per roaster.
- Cover with foil.
- Bake in 350 F. oven for 2 hours.
- Test for doneness.
- Cover and continue to bake until fork tender in center of roaster second layer down.
- Serves 50.
