Chicken Curry Buns
- 200 g Canned tomoatoes
- 150 g Chicken, cubed
- 2 Roma tomoatoes
- 1/2 cup Fresh cilantro, chopped
- 2 Fresh buns, any kind
- 1 tsp Garam masala
- 1 tsp Cumin powder
- 1 tsp Tumeric powder
- 2 tsp Coriander powder
- 1/2 tsp Chili powder
- Gather your ingredients and combine all the *spice mix* spices together in a small bowl
- Cook your canned tomatoes on a medium heat in a lightly oiled pan, add the *spice mix* and let this cook down for 5 minutes.
- Because it's going in a bun, we want this quite thick.
- In another pan, gently cook your chicken pieces until cooked through and lightly browned
- Then add the chicken to your spices and tomato sauce and cook for a further 2 or 3 minutes.
- For the last 30 seconds add in your chopped fresh cilantro
- Load your bun with the curried chicken, top with sliced fresh tomatoes and serve!
- Delicious as-is, or goes great with a side salad of chilled lettuce and cucumber.
