Blueberry Pancakes Recipe
- 1 c. lowfat milk
- 2 tbsp. light corn syrup
- 1 tbsp. corn oil
- 1 c. pancake mix
- 1/3 c. cottage cheese
- 1 egg
- Blueberry syrup
- Combine the lowfat milk, corn syrup, corn oil and egg in a mixing bowl.
- Add in the pancake mix and stir till dry ingredients are moistened.
- Batter will be lumpy.
- Add in the cottage cheese and mix.
- Pour 1/4 c. batter for each pancake on a warm griddle and cook till brown, turning once.
- Serve with blueberry syrup.
- 8 pancakes.
