Italian Stuffed Pasta Shells
- 1 lb mild Italian sausage
- 25 large pasta shells
- 1 can Italian diced tomatoes, drained
- 2 garlic cloves, minced
- 1/2 medium onion, diced
- 1/2 small package of ricotta, about 5 tbs.
- 1/3 cup shredded mozzarella cheese
- 1/2 cup chopped fresh padsley
- 1 salt, pepper to taste
- 1 dash italian seasoning, garlic powder, red pepper flakes
- preheat oven to 350
- boil a pot of water
- add pasta shells to water and boil until cooked, about 15 minutes...stir occasionally, and drain when finished.
- in the mean time, cook Italian sausage in pan in medium heat, then drain excess grease once browned.
- Set aside.
- add the diced onions to pan, cook two minutes.
- add chopped garlic to pan and cook an additional minute.
- add the can off tomatoes, the cooked Italian sausage, and fresh parsley
- season and stir until everything is incorporated.
- turn off the heat and stir in the ricotta cheese
- stuff the cooked pasta shells with the mixture, and arrange in a circular oven safe dish
- top with mozzarella cheese and cook for about 10 minutes or until the cheese melts
