Raw Coconut Lemon Macaroons
- 1- 1/2 cup Dates (Soaked In A Bowl Of Water For 1 Hour)
- 1 cup Raw Granola
- 1 whole Lemon, Juiced
- 1 Tablespoon Vanilla
- 1/4 cups Raw Agave
- 1 cup Unsweetened Organic Coconut
- Drain the dates after soaking them in a bowl of water for an hour.
- In a blender or food processor blend dates, granola and lemon juice for 30 seconds making sure the dates get chopped fully.
- Add vanilla, raw agave and 3/4 cup of your unsweetened coconut into the blender.
- Blend another 30 seconds.
- Spoon the mixture into a bowl.
- With clean hands roll out 1 tablespoon-sized scoops of the mixture into balls and line them up on a plate.
- Sprinkle remaining coconut over the top for garnish.
- Refrigerate for 1 hour before serving.
- Enjoy!
