Raw Coconut Lemon Macaroons

  1. Drain the dates after soaking them in a bowl of water for an hour.
  2. In a blender or food processor blend dates, granola and lemon juice for 30 seconds making sure the dates get chopped fully.
  3. Add vanilla, raw agave and 3/4 cup of your unsweetened coconut into the blender.
  4. Blend another 30 seconds.
  5. Spoon the mixture into a bowl.
  6. With clean hands roll out 1 tablespoon-sized scoops of the mixture into balls and line them up on a plate.
  7. Sprinkle remaining coconut over the top for garnish.
  8. Refrigerate for 1 hour before serving.
  9. Enjoy!
