Mock Chicken Cordon Bleu

  1. Heat oven to 375u0b0.
  2. Rinse chicken; pat dry.
  3. Spray a rectangular pan, 13 x 9 x 2-inches, with nonstick cooking spray. In a medium bowl, mix egg white, mustard, water and pepper.
  4. Place bread crumbs in a heavy plastic bag or large bowl.
  5. One piece at a time, dip chicken in egg white mixture, then coat with bread crumbs.
  6. Shake excess.
  7. Arrange chicken in pan.
  8. Bake, uncovered, 45 to 50 minutes or until chicken is no longer pink when cut into. Sprinkle with ham and cheese.
  9. Heat 5 minutes longer or until cheese melts.
