Mock Chicken Cordon Bleu
- 1 pkg. (about 3 lb.) whole cut up chicken
- 1 egg white, lightly beaten
- 1 Tbsp. Dijon mustard
- 1 Tbsp. water
- 1/4 tsp. pepper
- 3/4 c. dry bread crumbs
- 1/3 c. finely chopped ham or bacon
- 1/2 c. grated Swiss cheese
- Heat oven to 375u0b0.
- Rinse chicken; pat dry.
- Spray a rectangular pan, 13 x 9 x 2-inches, with nonstick cooking spray. In a medium bowl, mix egg white, mustard, water and pepper.
- Place bread crumbs in a heavy plastic bag or large bowl.
- One piece at a time, dip chicken in egg white mixture, then coat with bread crumbs.
- Shake excess.
- Arrange chicken in pan.
- Bake, uncovered, 45 to 50 minutes or until chicken is no longer pink when cut into. Sprinkle with ham and cheese.
- Heat 5 minutes longer or until cheese melts.
