Aubergine And Hamburger Casserole Recipe
- 1 lb Hamburger
- 1 x Onion, minced
- 1/2 x Green pepper, minced
- 1 x Clove garlic, crushed
- 1 x Aubergine
- 1 can (no. 2) tomatoes
- 1 can Tomato paste
- 3 Tbsp. Salad oil
- 1/2 lb Mozzarella cheese Grated Parmesan cheese
- Saute/fry onion, green pepper & garlic in oil.
- Add in hamburger & brown, adding salt & pepper to taste and 1 bay leaf if you like.
- Add in tomatoes & tomato paste & simmer about 1 hour.
- Peel & slice aubergine.
- Salt, pepper & flour each slice.
- Brown in oil in a separate skillet.
- In a casserole, pladce layer of aubergine & cover with some of the sauce, then add in a layer of Mozzarella.
- Repeat these layers again & top with grated Parmesan.
- Bake at 350 for 45 min.
