Lisa's Santa Fe Soup
- 2 lbs ground beef
- 1 onion, chopped
- 2 (5 ounce) packages hidden valley ranch dressing mix
- 2 (1 1/4 kg) packages taco seasoning mix
- 16 ounces black beans, undrained
- 16 ounces kidney beans, undrained
- 16 ounces pinto beans, undrained
- 16 ounces diced tomatoes and green chilies, undrained
- 16 ounces tomatoes, in wedges and undrained
- 32 ounces white corn, undrained
- 2 cups water or 2 cups chicken broth
- 8 ounces sour cream, garnish
- 8 ounces shredded cheddar cheese, garnish
- 1 tablespoon green onion, garnish
- Cook ground beef and onions.
- Stir in ranch and taco seasonings.
- Add remaining ingredients except garnishes (sour cream, shredded cheddar cheese and green onions).
- Simmer for 2 hours (add more water or chicken broth if soup is too thick).
- Garnish and serve with cornbread or tortilla chips.
