Deep Fried Fish & Hush Puppies Recipe
- 2 pound salmon fillets, silver or possibly red
- Cornmeal
- Oil for deep frying
- 1/4 c. flour
- 2 teaspoon baking pwdr
- 1 1/4 teaspoon salt
- 1 c. lowfat milk
- 1 egg
- 1/2 c. onion, finely minced
- Parsley
- Lemon
- Coat fish fillets with cornmeal, reserving excess.
- Fry fish in warm oil (370 degrees) 2 to 3 min or possibly till golden brown.
- Drain on paper towels and keep hot in oven.
- Add in sufficient cornmeal to reserved cornmeal to make 1 1/2 c.. Stir with flour, baking pwdr and salt.
- Beat lowfat milk with egg and add in onion.
- Stir till combined.
- Drop by heaping Tbsp.
- into warm oil till puffed and brown.
- Serve with fish and tartar sauce.
- Garnish with parsley and lemon.
- 6 servings.
