Carmelized Fennel and Onion

  1. Cut up onions and fennel into large pieces removing to core of the fennel.
  2. In a large skillet add olive oil, butter, fennel and onions.
  3. Cook on med high to high for about 10 minutes stirrig occasionally.
  4. Sprinkle with salt and stir.
  5. Reduce heat to medium and cook for another 20 to 40 minutes stirring occasionally.
  6. Check for desired doneness.
  7. I like it when it is mostly browned on all sides.
  8. Be careful they don't become too dry.
  9. Remove from heat and add parmesan.
