Carmelized Fennel and Onion
- 2 large onions
- 2 large fennel bulbs
- 14 cup olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- 14 cup parmesan cheese
- Cut up onions and fennel into large pieces removing to core of the fennel.
- In a large skillet add olive oil, butter, fennel and onions.
- Cook on med high to high for about 10 minutes stirrig occasionally.
- Sprinkle with salt and stir.
- Reduce heat to medium and cook for another 20 to 40 minutes stirring occasionally.
- Check for desired doneness.
- I like it when it is mostly browned on all sides.
- Be careful they don't become too dry.
- Remove from heat and add parmesan.
