Easy Cheesy Mexican Casserole

  1. PREHEAT oven to 400 degrees.
  2. BROWN meat and drain.
  3. (Since I buy lean meat, I like to add a Tbsp of salsa while I'm browning to give it a little more juice.

  5. DRAIN and rinse beans.
  6. MIX browned meat, salsa, seasoning, and beans.
  7. PLACE 2 flour tortillas on the bottom of a glass casserole dish.
  8. (the edges will go up the sides slightly).
  9. TOP the tortillas with half of EACH of the meat mixture, cheese, and sour cream.
  10. PLACE the other 2 tortillas on top and repeat the layer.
  11. COVER with foil.
  12. BAKE for 30 minutes covered.
  13. REMOVE foil cover.
  14. BAKE 10 more minutes uncovered or until cheese is melted.
