Spicy Kale Dusted Popcorn
- 1 bunch Kale
- 2 Tablespoons Olive Oil, Divided
- 1 pinch Salt
- 1 pinch Chili Powder
- 1/4 cups Popcorn Kernels
- Preheat oven to 250 degrees F. Rinse and cut kale into large pieces, ensuring that the stems and large ribs are removed.
- Place into a large bowl and drizzle just 1 tablespoon of olive oil over the kale.
- I dont use as much olive oil on the kale that Im adding to popcorn, or it becomes too oily to dust with.
- Add salt and a pinch of chili powder.
- Mix well with your hands, and place in the oven on a baking pan for 15 minutes.
- I used wax paper for easy clean up.
- Make popcorn by adding kernels to a large saucepan with the remaining tablespoon of olive oil.
- Use pot holders to shake the pan frequently until all popcorn is popped.
- Remove baked kale, grind the kale into small flakes with a mortar or with a spoon.
- When the kale is crispy, this should be easy to do.
- Sprinkle the kale on the popcorn and serve.
