Ravioli With Sweet Potatoes and Thyme
- 1 lb sweet potato, peeled and diced
- olive oil
- thyme
- salt
- pepper
- 1 (16 -18 ounce) package cheese ravioli
- 12 cup crumbled goat cheese
- 13 cup reserved pasta water
- Toss the sweet potatoes with oil and thyme; season with salt and pepper.
- Roast at 400 until tender, 25-30 minutes.
- Cook the ravioli according to package directions.
- Toss ravioli with goat cheese and pasta water; fold in the sweet potatoes and sprinkle with more goad cheese if desired.
