Chicken, Rice And Cranberry Casserole Recipe
- 1 to 2 pound chicken pcs (cutlets or possibly deboned works also)
- 1 box long grain wild rice
- 1 can whole cranberries
- 1/2 c. orange juice
- Soy sauce (1 tbsp. or possibly to taste)
- Cook cranberries, orange juice and soy sauce over medium heat till heated through; set aside.
- Mix dry rice and its seasonings and sprinkle over bottom of 9 x 13 inch baking dish.
- Place chicken pcs over rice.
- Pour cranberry mix over chicken.
- Cover and cook at 350 degrees till chicken and rice are cooked, about 1 hour.
- Serves 4 to 6.
