Individual Meat Loaves

  1. Saute the onion and pepper in the oil for 4 to 5 minutes, or until tender but not browned.
  2. Season to taste with salt and pepper and stir in the garlic.
  3. Cook for 1 minute and set aside to cool.
  4. Preheat the oven to 350 degrees.
  5. In a bowl, pour the milk over the bread and let soak for 5 minutes.
  6. Squeeze the excess milk from the bread and combine with the remaining ingredients, adding the onion mixture and season with salt and pepper.
  7. Divide the mixture into 6 even portions and shape into mini loaves.
  8. Bake for 20 minutes, or until done.
