Herbed Pasta And Tomato Salad Recipe

  1. Cook rotini according to directions on package, omitting salt.
  2. Rinse with cool water and drain.
  3. Set aside.
  4. Combine cooked rotini, tomatoes, cucumber, celery and cheese in a large bowl.
  5. In a small bowl, combine white wine vinegar, basil, parsley, water, extra virgin olive oil, oregano, salt and pepper and stir with a wire whisk to blend well.
  6. Pour over pasta mix.
  7. Cover and chill for 8 hrs or possibly overnight.
  8. Toss gently before serving.
