Sugar and Spice Muffins
- 2 12 cups buttermilk pancake mix
- 23 cup water
- 12 cup sugar
- 14 cup vegetable oil
- 1 large egg
- 12 teaspoon grated nutmeg
- 4 tablespoons butter
- 12 cup sugar
- 2 teaspoons ground cinnamon
- Preheat oven to 400 degrees.
- In a medium bowl, stir together pancake mix, water, sugar, vegetable oil, egg and nutmeg until just blended.
- Spoon batter into a lightly greased, or paper lined, 12 cup muffin pan, filling 2/3 full.
- Bake for 12-14 minutes, or until a toothpick inserted in center comes out clean.
- To prepare the topping, melt butter and set aside.
- In a small bowl, stir together sugar and cinnamon.
- While muffins are still warm from the oven, dip into melted butter and then into the cinnamon sugar mixture.
