Beef Enchilada Casserole

  1. Preheat oven to 350* F. Spray 13x9-inch (3-quart) baking dish with cooking spray
  2. In a large skillet brown ground beef till no longer pink
  3. Drain ground beef and transfer to a large bowl
  4. Add 1/4 cup of the enchilada sauce
  5. All of the salsa
  6. And 1 cup of cheese
  7. Stir to combine
  8. Lay a tortilla on a plate
  9. Scoop a generous amount of the mixture down the middle of the tortilla.
  10. Roll the tortilla tightly.
  11. Place in the baking dish seam side down
  12. Top with remaining enchilada sauce
  13. Top with remaining cheese
  14. Spray a piece of foil large enough to cover dish with cooking spray and cover dish cooking spray side down.
  15. Bake 45 minutes or until hot and bubbly.
  16. Plate and enjoy!
