Crispy Chicken & Parmesan Vegetables
- 1 lb. new red potatoes, halved King Sooper's 5 lb For $1.88 thru 02/09
- 4 chicken leg quarters (1-1/2 lb.), skin removed Whole Foods 1 lb For $3.99 thru 02/09
- 1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix
- 2 small red peppers, cut into wedges
- 1/4 cup KRAFT Classic Ranch Dressing
- 1/4 cup KRAFT Grated Parmesan Cheese
- Heat oven to 400F.
- Microwave potatoes in large covered microwaveable casserole dish on HIGH 7 min.
- Meanwhile, coat chicken with coating mix as directed on package.
- Place chicken in greased foil-lined 15x10x1-inch baking pan.
- Toss potatoes with peppers, dressing and cheese; add to pan with chicken.
- Bake 40 min.
- or until chicken is cooked through (165F) and potatoes are tender.
