Pumpkin Seed Crusted Tilapia

  1. Preheat oven to 400 degrees F.
  2. In a small bowl, combine pumpkin seeds, parmesan, garlic, chives, cayenne pepper and butter.
  3. Mix well.
  4. Place fish, skin side down, in a greased baking pan that is large enough to hold the fish in a single layer.
  5. Spread mayonnaise evenly over the top of the fish.
  6. Sprinkle evenly with crumb mixture, lightly pressing into fish.
  7. Bake for 20-25 minutes or until fish flakes with a fork.
