Jelly roll for bold fruit
- 4 eggs
- 1 cup sugar
- 1/3 cup hot water
- 1 tsp vanilla extract
- 1 1/4 cup cake flour
- 1 tsp baking powder
- 1 pinch salt
- 2 tbsp sour cream
- 1 1/4 cup fruit preserves
- Beat eggs and add sugar gradually till thick and lemon yellow.
- Add in water, sour cream and vanilla.
- Beat well.
- Add in dry ingredients and beat til smooth.
- Pour into greased parchment paper lined jelly roll pan.
- Bake at 375 for 15 min.
- Meanwhile, lay out kitchen towel big enough to cover pan and sprinkle liberally with powdered sugar.
- Immediately on taking cake out of oven, spread towel on top, sugar side down.
- Flip cake over right away and peel off parchment paper.
- Roll came and towel into a tight roll short side to the end.
- Set aside tightly wrapped until fully cooled.
- Once cool, unwrap gently and spread preserves evenly and generously.
- Reroll cake, peeling off towel as you go.
