Jelly roll for bold fruit

  1. Beat eggs and add sugar gradually till thick and lemon yellow.
  2. Add in water, sour cream and vanilla.
  3. Beat well.
  4. Add in dry ingredients and beat til smooth.
  5. Pour into greased parchment paper lined jelly roll pan.
  6. Bake at 375 for 15 min.
  7. Meanwhile, lay out kitchen towel big enough to cover pan and sprinkle liberally with powdered sugar.
  8. Immediately on taking cake out of oven, spread towel on top, sugar side down.
  9. Flip cake over right away and peel off parchment paper.
  10. Roll came and towel into a tight roll short side to the end.
  11. Set aside tightly wrapped until fully cooled.
  12. Once cool, unwrap gently and spread preserves evenly and generously.
  13. Reroll cake, peeling off towel as you go.
  14. Frost with fluffy white frosting found on this site with my review and enjoy!
