Crockpot Shrimp and Grits
- 6 cup Chicken Broth
- 3/4 tsp Salt
- 1 1/2 cup Quick cooking grits
- 1 Green pepper, chopped
- 1/2 cup Red pepper,chopped
- 6 Green onions, chopped
- 2 Garlic cloves, minced
- 1 1/2 lb Shrimp, peeled and cleaned
- 2 tbsp Butter
- 1 1/2 cup Shredded sharp cheddar cheese
- 1 1/2 cup Shredded monterey jack cheese
- 2 can Diced tomatoes and green chilis, drained
- 1/4 tsp Cayene pepper
- Combine chicken broth, salt and grits in crockpot and cook on low for 6 to 8 hours.
- 2 hours before serving saute peppers, onions, garlic and shrimp in 2 tablespoons butter until tender.
- Add this mixture to the crockpot along with the cheeses, tomatoes and chilis and cayene.
- Continue to cook on high for additional 2 hours.
