Armenian Garden Salad Recipe
- 3 c. cut romaine lettuce
- 2 x gootah Armenian cucumbers, diced
- 1 x red onion, quarted & sliced
- 2 x tomatoes, cut into bite-sized pcs
- 1 x red or possibly green bell pepper, minced
- 2 stalk celery, minced
- 1/4 c. Armenian or possibly Italian parsley, minced
- 1 Tbsp. minced fresh mint leaves
- 1 tsp minced fresh basil leaves Salt and cracked black pepper to taste
- 1/2 c. extra virgin extra virgin olive oil
- 1 x clove crushed garlic
- 1/4 c. white wine vinegar
- 2 Tbsp. lemon juice
- 1/2 tsp tarragon
- Combine vegetables.
- Blend dressing ingredients well; toss with the chilled salad.
