Spiced Orange Juice Chicken
- 1 cup Orange Juice
- 1 Tablespoon Orange Zest
- 6 Tablespoons Vinegar
- 4 Tablespoons Soy Sauce
- 1/2 cups Brown Sugar
- 2 teaspoons Garlic Paste
- 2 teaspoons Fresh Ginger Paste
- 1/2 teaspoons Red Pepper Flakes (optional)
- 1 teaspoon Cumin
- 6 whole Chicken Breasts
- 2 Tablespoons Cornstarch
- Preheat oven to 400 degrees F. Place chicken in a 9x13 casserole dish and set aside.
- In a bowl, combine juice, zest, vinegar, soy sauce, brown sugar, garlic, ginger, red pepper flakes and cumin.
- Stir together well and pour over chicken.
- Bake for 45 minutes or until chicken is cooked through.
- Remove chicken from dish and pour juice mixture into a small saucepan over low to medium heat, reserving 1/2 a cup.
- While sauce is heating, take reserved sauce and whisk in cornstarch, and then whisk into the rest of the sauce.
- Allow to thicken, about 5 minutes.
- Pour sauce over chicken and serve.
