Spiced Orange Juice Chicken

  1. Preheat oven to 400 degrees F. Place chicken in a 9x13 casserole dish and set aside.
  2. In a bowl, combine juice, zest, vinegar, soy sauce, brown sugar, garlic, ginger, red pepper flakes and cumin.
  3. Stir together well and pour over chicken.
  4. Bake for 45 minutes or until chicken is cooked through.
  5. Remove chicken from dish and pour juice mixture into a small saucepan over low to medium heat, reserving 1/2 a cup.
  6. While sauce is heating, take reserved sauce and whisk in cornstarch, and then whisk into the rest of the sauce.
  7. Allow to thicken, about 5 minutes.
  8. Pour sauce over chicken and serve.
