Einar's Habanero Pepper Sauce
- 12 whole fresh habanero chiles, stems removed
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup chopped carrots
- 1/2 cup white vinegar
- 1/4 cup fresh lime juice
- 1 tbsp. olive oil
- Saute the onion and the garlic in the oil until soft about 3-4 minutes.
- Add the carrots with a small amount of water.
- Bring to a boil; reduce the heat and simmer until the carrots are soft.
- Place the mixture and the chiles in a blender and puree until smooth.
- Combine the puree with the vinegar and the lime juice and simmer for 5 minutes to combine the flavors.
- Take off the burner and let cool.
- Strain the mixture into sterilized bottles and seal.
