Einar's Habanero Pepper Sauce

  1. Saute the onion and the garlic in the oil until soft about 3-4 minutes.
  2. Add the carrots with a small amount of water.
  3. Bring to a boil; reduce the heat and simmer until the carrots are soft.
  4. Place the mixture and the chiles in a blender and puree until smooth.
  5. Combine the puree with the vinegar and the lime juice and simmer for 5 minutes to combine the flavors.
  6. Take off the burner and let cool.
  7. Strain the mixture into sterilized bottles and seal.
