Beet Borscht Recipe
- 1 1/2 c. beet liquid, liquid removed of 1 beets
- 3/4 c. tomato juice
- 1/4 tsp onion pwdr
- 1/4 tsp salt
- 1 tsp fresh lemon juice
- 1/4 c. plain low-fat yogurt
- Mix all ingredients except yogurt.
- Refrigerate2-3 hrs in a covered jar.
- Serve in cocktail glasses or possibly small glass bowls, topping each with 1 Tbsp.
